# Golden brown

Golden brown is the deep, even gold color food turns as it browns in the oven or pan. It signals flavor from browning and that baked goods are cooked.

Also called Golden, Until golden, Lightly browned.

Golden brown is the color recipes use to tell you food has browned enough. It is a warm, even shade between light gold and medium brown, like a well-baked loaf crust or a fried chicken cutlet. The color comes from the [Maillard reaction](https://www.tinyplates.dev/glossary/maillard-reaction) and [caramelization](https://www.tinyplates.dev/glossary/caramelization), which also create the toasty flavors you are after. It is a clue for doneness, not a guarantee.

## How to tell it is done

* Bread and pastry: the top and sides are deep gold to light brown all over, with no pale patches. Underneath is browned too.
* Cakes and muffins: the top is light golden and springs back when pressed.
* Fried food: the coating is an even deep gold and crisp, not tan or dark brown.
* Onions: soft and amber, sweet-smelling, with no black edges.
* Roast potatoes: crisp, golden edges with a few darker spots.

Check doneness another way as well. Use the [toothpick test](https://www.tinyplates.dev/glossary/toothpick-test) for cakes, and a thermometer for meat and bread.

## Why it works

Browning reactions speed up once the surface dries and passes about 140°C (285°F). Sugars and proteins break down and recombine into hundreds of new compounds that taste nutty, roasted and sweet. Golden brown is the point where these flavors are strong but bitterness has not set in.

## How to use it

* Brush pastry and bread with [egg wash](https://www.tinyplates.dev/glossary/egg-wash) or milk for a deeper, shinier gold.
* Dry surfaces before you [deep-fry](https://www.tinyplates.dev/glossary/deep-fry), roast or sear. Water keeps them pale.
* Use the middle oven rack. The top browns fast near the element, the bottom browns underneath.
* Tent with foil if the top is golden before the inside is cooked.

## Common mistakes

* Stopping at pale. Pale crusts taste flat, and pale pastry can be raw inside.
* Going by time only. Ovens and pans vary. Use color with other tests.
* Judging under yellow light. Kitchen lighting can make food look darker or lighter. Look closely.
* Assuming golden means done. A thick chicken piece can be golden outside and raw inside.

## In recipes

"Bake until golden brown, 25 to 30 minutes" and "fry until golden" are the usual forms. "Lightly golden" means take it out at the early, pale-gold end.
