# Quiche

Quiche is a savory tart of eggs and cream baked in a pastry crust with bacon, cheese or vegetables. See the ratio and how to avoid a soggy base.

Also called Quiche Lorraine, Savory tart.

Quiche is a savory tart. A pastry crust is filled with a custard of eggs and milk or cream, plus fillings such as bacon, cheese, onions or vegetables, then baked until just set. The classic is _quiche Lorraine_, with bacon and cream. It is served warm or at room temperature.

## How to do it

1. Line a 23 cm (9 inch) [tart pan](https://www.tinyplates.dev/glossary/tart-pan) with [shortcrust pastry](https://www.tinyplates.dev/glossary/shortcrust-pastry) and chill it for 30 minutes.
2. [Blind-bake](https://www.tinyplates.dev/glossary/blind-bake) the case at 200°C (400°F) for about 15 minutes with weights, then 5 to 10 minutes without, until dry and lightly golden.
3. Lower the oven to 160 to 170°C (325°F).
4. Cook the fillings first. Fry bacon, soften onions, and squeeze water out of cooked greens.
5. Whisk 3 eggs with 300 ml (1¼ cups) of cream or a cream and milk mix. A good ratio is about 1 egg to 100 ml (scant ½ cup) of dairy. Season with salt, pepper and nutmeg.
6. Scatter the fillings and cheese in the case, then pour in the custard.
7. Bake for 30 to 40 minutes. Cool for at least 15 minutes before cutting.

## How to tell it is done

The edges are set and lightly puffed. The center wobbles slightly as one piece when you nudge the pan, like the [jiggle test](https://www.tinyplates.dev/glossary/jiggle-test) for custards, but does not slosh. It firms up as it cools.

## Common mistakes

* Skipping the blind bake. The crust stays raw and soggy.
* Wet fillings. They leak water and the custard weeps.
* A hot oven. The custard puffs, cracks and turns spongy.
* Overbaking until fully firm. It becomes rubbery by the time it cools.

## In recipes

A recipe that says "quiche" expects a pastry crust. A crustless quiche is close to a [frittata](https://www.tinyplates.dev/glossary/frittata), but softer, because it has more dairy. Quiche keeps in the fridge for 3 to 4 days. Reheat slices in a 160°C (325°F) oven to crisp the crust again.

## Where it comes from

Quiche comes from Lorraine in northeastern France. The early versions had no cheese.
